In the skin, astaxanthin is particularly valuable for protecting against free radicals produced by the sun s UV rays. It occurs naturally in many foods, including salmon, crab and lobster (to which it gives its rich red colour), but by far the best source is the microalgae Haematococcus pluvialis, which can provide 8,000 times more astaxanthin than in salmon.
